Nasoya Tofu Scrambler

Nasoya plant protein allows you to make better breakfast choices this spring and include fresh veggies of the season.

INGREDIENTS
1 pkg Nasoya Organic Firm Tofu or Nasoya Organic Firm TofuPlus, patted dry
1 tbsp canola oil
1 clove garlic, minced
1 small white onion, chopped
1/2 red and orange bell pepper, chopped
3 button mushrooms, sliced
1 tsp salt
1/2 tsp turmeric
1/4 cup chopped chives

Quiche with Smart Bacon



1 ready-made frozen pie crust
4 eggs (for vegans, replace and whisk together 1 cup chickpea flour, 1 cup water and ½ cup coconut milk – or use store-bought vegan egg substitute)
½ cup heavy cream (omit for vegan)
3 hash brown potato patties
½ teaspoon garlic powder
½ cup Colby jack shredded cheese (or shredded vegan cheddar)
2 Roma tomatoes, sliced
½ package Lightlife Smart Bacon (½ of it chopped finely and ½ left in slices)

Colman's Mustard Spicy Chocolate Popcorn



Colman's Mustard Spicy Chocolate Popcorn
1 bag buttered popcorn
½ cup semi-sweet chocolate chips
¼ cup milk
2 tsp. Colman's Mustard
1 tbsp. light Karo Syrup
Directions: 
Pop the popcorn according to package directions. In a small saucepan add the chocolate chips and heat on low. Add the milk and stir constantly until the chocolate is melted and smooth. Add the mustard and the Karo syrup. Mix well. Dump the popcorn into a bowl and pour chocolate mixture over popcorn. Mix well and let it sit till it cools.

Blueberry Biscuits

These are the only biscuits i could ever make that came out even close to looking like a biscuit.

For the biscuits: 

2 Cups Flour 

1 Cup milk (or buttermilk)
1/3 Cup sugar
5 T of butter
4 tsp baking powder
1 tsp salt
3 oz of blueberries (fresh or dried)

For the glaze: 


1 Cup of powdered sugar

1/8 Cup of water
1 tsp of vanilla
½ tsp of lemon juice 

**My biscuits above has no glaze **
Directions: 
Freeze butter. Preheat oven to 450F. Mix salt, sugar, flour, and baking powder in a bowl and sift. Add the cold milk into dry ingredients and mix. As dough begins to form, us
e a cheese grater to grate your frozen butter evenly over dough. Fold dough, and knead… repeat until all butter is spread evenly throughout dough. (If dough is too sticky to handle, add 1/4 Cup flour.)
Fold in the blueberries. Gently pull of chunks of dough and pat to form biscuits. Place on un-greased cookie sheet or cake pan. (Or spoon into muffin tins!)
Place in oven and bake for about 7-12 minutes (until golden). Melt 1 tablespoon of butter in the microwave, and paint finished biscuits with pastry brush. Mix glaze ingredients in a bowl, and drizzle over BoBerry Biscuits with a fork.

Red, White and Blue Sweet Potato Muffins Using Princella Sweet Potatoes



Ingredients

1 1/2 cups All-purpose flour 
1/2 cup Sugar 
2 tsp. Baking powder 
3/4 tsp. Salt 
1/2 tsp. Cinnamon 
1/2 tsp. Nutmeg 
1/2 15 oz. can Princella or Sugary Sam Cut Sweet Potatoes, drained and mashed 
1/2 cup Milk 
1/4 cup Butter or margarine, melted 
1 Egg, lightly beaten 
1 cup Blueberries, fresh or thawed frozen
1 cup Cranberries, fresh or thawed frozen (optional)

Directions

Preheat oven to 375°F. Lightly grease twelve 2 1/2-inch muffin cups; set aside. Combine flour, sugar, baking powder, salt, cinnamon and nutmeg in large bowl and stir until blended. Add sweet potatoes, milk, butter and egg. Stir until just moistened. Stir in blueberries. Spoon into prepared muffin cups, filling two-thirds full. Sprinkle with additional sugar and cinnamon. Bake 15 to 20 minutes until toothpick inserted in muffins comes out clean. Remove from muffin cups and cool on wire racks 5 minutes.

I used Cherries for my red and they came out fine and they taste very yummy!

Jolly Time Popcorn


Popcorn is a low fat snack alternative and at Christmastime you can do so much with popcorn such as make a garland, make popcorn balls with molasses and enjoy with your favorite movie or listen to your favorite Christmas songs. I was recently given the opportunity to review Jolly Time popcorn which has been around for close to 100 years. 10 cups popped popcorn
1 (1-lb.) package large marshmallows
1/4 cup (1/2 stick) butter or margarine
1 teaspoon vanilla
Decorations: sprinkles, licorice, gum drops, cinnamon candies, etc.
Here's How:
Melt marshmallows and butter in a large saucepan. Remove from heat and stir in vanilla. Let stand for 5 minutes.
Pour over popcorn and stir. Butter hands well and form into balls. Decorate as desired.
Yield: 10 balls, 5 Snowmen (2 balls each)
